I absolutely love a good chopped salad, all the different flavors are perfect when your super hungry! This one is dairy free, gluten free, and vegetarian!
Serves: 8 Prep Time: 20min Cook Time: 10min Calories: 400 (1 serving) Ingredients: Salad - 1 Can of Black Beans - 1 Avocado - 4 Hard Boiled Eggs - 1 large bag of Spinach - 1 small red onion - 1 tub of cherry tomatoes (halved) Dressing: - 1/2 C Balsamic Vinaigrette - 1/4 C Extra Virgin Olive Oil - 1 T Dijon Mustard - 1 T of Minced Garlic - Salt & Pepper to taste |
Directions:
Fill a large pot of water big enough to fit 4 eggs, place on stove and turn the burner on high. Next wash all the veggies and chop them up! Once water is boiling place all the eggs in the pot and leave for 10min. While waiting for the eggs to boil, mix all dressing ingredients in a medium size bowl with whisk. Once eggs are done - place them in a bowl of ice water and let them cool. Peel and chop eggs. To present salad lay the spinach down in a large bowl. Next in lines place the beans, tomatoes, avocados, red onions, and eggs on top of spinach (reference the above picture). Once complete place dressing in a cute container and at the table toss in front of crowd!
